My Cupcakes are Famous!

There is an amazing cupcake store in town that sells delicious Strawberry Lemonade cupcakes. My co-worker and I have gone there numerous times just for these cupcakes, but they are a bit pricey so I wanted to find out if I could replicate them at home.

Over the 4th of July weekend, Mike and I were invited to a friends house to watch fireworks and we had to bring food to share. I thought it would be a great excuse for me to play in the kitchen and see if I could make my own version of the strawberry lemonade cupcakes. They turned out pretty good - although I wasn't thrilled with the filling and the frosting. I used a strawberry only filling and made homeade strawberry buttercream frosting. The filling was bland - nothing exciting and the heat killed the frosting. It ended up being really runny after sitting out for awhile.

I wanted another chance to make these cupcakes again, but with a few improvements. I can't make them if nobody else is going to eat them because Mike and I wouldn't eat 24 cupcakes. (I can't eat a lot of sweets anymore. My stomach just doesn't like a lot of sugar!)

This past Saturday, my co-workers and I had a baby shower for the morning show producer, KC, and his wife Jessica. It was going to be a PERFECT opportunity for me to make cupcakes! I made a few adjustments - a strawberry AND lemon filling (hence Strawberry Lemonade cupcakes...) and instead of making my own frosting, I just used store bought strawberry and lemon frostings. MUCH easier!

Well, apparently they were a hit! One of the morning show hosts, Lisa, fell in LOVE with them - enough that this morning on the morning show, she talked about them AND posted the recipe on the morning show blog. You can see it here.

After the cupcakes were featured on the morning show, I started getting emails from people who heard her talk about them. One in particular made me laugh. A little background: We're doing a "5th Quarter" event in September at a church on the west side of town for high school students in the area. We've invited the band, Affix, to come in and play for us that night. Anyway, the guitar player for Affix emailed me this morning and said:

"I have one request for our arrival in September.... PLEASE make these cupcakes that everyone is raving about. Thanks! :)"
